Ingredients

  • 1 teaspoon cinnamon, ground, divided in half

  • 2 cups apple, peeled, sliced thinly

  • 1/2 cup butter, softened + to coat parchment

  • 3/4 cup light brown sugar, packed

  • 2 large eggs

  • 1/2 cup whole milk

  • 1/2 teaspoon vanilla extract *

  • 1 1/2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 cup apple, peeled, diced 1/2″ (1.27cm)

  • 2 tablespoons raw honey, for glazing cake

Directions

  • Preheat oven to 350°F, line a 10″ springform pan with parchment and coat paper with butter.
  • Peel and slice apples and dice remaining apples.
  • Sprinkle coated paper with cinnamon and arrange apple slices in a single layer over cinnamon.
  • Cream butter & brown sugar, then beat in egg, milk & vanilla on low speed until blended.
  • Mix flour, baking powder & remaining cinnamon and stir into creamed mixture just until blended.
  • Stir diced apples into batter, spoon over sliced apples and smooth out.
  • Bake until a toothpick inserted in the center comes out clean, for 30 min. to 35 min.
  • Invert immediately onto a serving plate; drizzle with honey and serve warm, or cool and serve at room temperature.

  • * Vanilla Extract Substitute: Vanilla powder is a low-histamine alternative for vanilla extract.
  • Layering Technique: For a beautiful presentation, arrange the apple slices in a pattern before pouring in the batter. This not only looks appealing but also allows the apples to caramelize beautifully during baking.
