Ingredients

  • CRUST
  • 1/2 c. tiger nut flour

  • 3 T. coconut flour

  • ¼ t. baking powder, aluminum-free

  • 1 pinch salt

  • 23 T. coconut oil, steam-deodorized, see ing. note

  • 2 T. applesauce, unsweetened

  • 2 T. maple syrup

  • FILLING
  • 1 c. coconut milk

  • 1/2 c. pumpkin purée

  • 1/4 c. maple syrup

  • 1/2 t. cinnamon, ground

  • 1/4 t. ginger, ground

  • 1 pinch cloves, ground

  • 1 T. gelatin, organic grass-fed

  • TOPPINGS
  • 1/2 c. whipped coconut cream

  • 3 T. dried coconut, finely shredded, unsweetened

  • 3 T. date caramel sauce *

Directions

  • PREP & BAKE CRUSTS
  • Adjust oven rack to middle position and preheat to 350°FMelt coconut oil and line a muffin tin with muffin liners.
  • Mix tiger nut flour, coconut flour, baking powder & salt in a medium bowl.
  • Mix applesauce & maple syrup into melted coconut oil, then mix into the flour mixture until it forms a soft dough.
  • Divide dough evenly between muffin cups, forming into a crust, and bake until crust edges are golden brown, 16 min. to 18 min. Remove from oven and cool while prepping filling.
  • FILL, SET & TOP
  • Bring all filling ingredients except gelatin to a low boil on med-high, frequently stirringRemove from heat and blend in gelatin until melted using an immersion blender or transfer to a high-speed blender.
  • Pour filling into crusts and refrigerate until filling is set, 3 hr.
  • Top with whipped coconut cream & shredded coconut, drizzle with caramel sauce and serve chilled.

Tips & Tricks

  • For those on the AIP diet, use an AIP-compatible caramel sauce.
  • Using Dried & Fresh Herbs & Spices Interchangeably: Substitute using a ratio of 1 part dried, crushed to 3 parts fresh, minced. To calculate: divide fresh measurements by 3 or multiple dried measures by 3.
