Ingredients

  • 2 lb. yukon gold potato

  • 2 c. water, purified

  • 1 t. salt

  • 1/4 c. heavy cream

  • 1 pinch pepper, black or white, fresh ground, see sub note, to taste

Directions

  • PRESSURE COOK & MASH
  • Place potatoes, water & salt in a multicooker, secure lid, select ‘manual-high pressure’, and adjust time to 20 min. See Tips and Tricks
  • Turn off multicooker, quick-release pressure, and transfer potatoes to a mixing bowl, reserving cooking water.
  • Add cream to potatoes and mash with a potato masher, adding small quantities of cooking liquid until the desired consistency. Season with salt & pepper and serve warm.

Tips & Tricks

  • The average heat-up time for multicookers is 15 min.
  • Add any seasoning you prefer to taste in Step 3
  • Yukon Gold Substitution: Yukon Golds are preferred for their lower starch content, moist flesh, and buttery flavor. If unavailable, look for other yellow flesh varieties, such as German Butterball or Yellow Finn. If pale skin isn’t essential, round red or purple-skinned varieties like Huckleberry Gold can work well and add fun color to your dish!
  • Black pepper is high in oxalate: Substitute white pepper on a low-oxalate diet.
