This Plant-Based Coconut Cream Fudge is a deliciously indulgent dessert inspired by modern whole-food and vegan cuisine. Featuring rich raw cacao, silky coconut cream, and the natural sweetness of date syrup, it offers chocolatey goodness without refined sugar. The recipe celebrates tropical and nutty flavors, perfect for gifting or enjoying as a cozy winter treat or chilled summer bite.

Ingredients

  • 15 fl-oz. coconut cream

  • 1/4 c. coconut oil, extra virgin

  • 1/2 c. date syrup, +/- to preference

  • 12 T. vanilla extract

  • 1 t. salt

  • 3/4 c. cacao powder, raw, +/- to preference [1]

  • 1 c. walnuts, crispy, chopped, or other nuts

Directions

  • MIX & FIRM
  • Soften coconut cream in a glass measuring cup in a hot water bath, then transfer to a large bowl.
  • Mix coconut cream using a hand mixer or stand mixer until smooth.
  • Mix in coconut oil, date syrup, vanilla extract & salt thoroughly.
  • Mix in cacao powder 1 T. at a time, while mixing to ensure no lumps, check for flavor while adding until it reaches your preference.
  • Make any flavor adjustments to preference.
  • Chop nuts and mix into batter by hand. Spread mixture 8” x 8” baking pan or a silicone mold, and refrigerate until firm.
  • Cut in half one way and then the other to make four equal squares, and then cut each small square into equal pieces and serve immediately while still chilled

Tips & Tricks

  • Crispy nuts and seeds are soaked for 8-12 hrs. to reduce antinutrients and unlock nutrition, then re-crisped using low heat to preserve nutrients and fats. We recommend using crispy nuts over unsoaked/raw nuts and seeds. See the Make Your Own link above for preparation instructions.
  • Ingredient Substitutions
    Raw cacao powder is nutritionally superior to cocoa powder, with more antioxidants, vitamins, and minerals due to minimal processing and heat. It has a more intense, bitter, complex flavor vs. cocoa’s milder, smoother taste. You can substitute cocoa for cacao, but the flavor will be less pronounced.
