Ingredients
- SAUCE
1 ¾ cup coconut milk
1 cup water, purified
1 cup chicken bone broth
1/4 cup nutritional yeast
½ teaspoon salt
¼ cup + 1 tablespoon bacon grease, lard or ghee
¼ cup + 1 tablespoon cassava flour
- CASSEROLE
2 tablespoon olive oil, extra virgin
¾ cup leeks, white & light green parts, sliced thinly
6 cup lacinato kale, stemmed, chopped
12 oz. ham, diced 1/4″
12 oz. cassava penne pasta
1 tablespoon + 1 ½ teaspoon nutritional yeast, for sprinkling
Directions
- COOK KALE & SAUCE
- Preheat oven to 350°F. Set up an ice bath and boil a large pot of water.
- Trim dark green tops and roots from leeks, halve lengthwise, slice thinly, remove stems and chop kale. Dice ham into ¼“ cubes.
- Blanch kale for 30 sec. remove with tongs or a slotted spoon and plunge into ice bath. Reserve water for boiling pasta. Drain kale and squeeze out excess water.
- Mix coconut milk, water, broth, nutritional yeast or & salt
- Heat bacon grease in a saucepan on medium, whisk in cassava flour and cook while whisking until roux forms, 1 min. to 2 min.
- Whisk in one-third of the liquid, whisking constantly to remove lumps. Whisk in another one-third, then whisk in remaining one-third and simmer frequently, stirring for 3 min. Remove from heat and set aside.
- SAUTÉ LEEK, ASSEMBLE & BAKE
- Cook pasta in same water used for blanching kale for 2 min. less than package instructions, so its al dente. Drain.
- Heat olive oil on medium in a small frying pan and sauté leeks until softened, 5 min.
- Mix leeks, kale, ham & pasta into a large bowl, then mix in sauce.
- Spoon mixture into an 11” x 8” baking dish. Sprinkle yeast over top, cover and bake for 30 min.
- Remove cover and bake until bubbling and golden brown on top, 25 min. to 30 min. Serve hot.
