Ingredients

  • ORGANIZE INGREDIENTS
  • 2 c. coconut flakes, unsweetened

  • 1 c. dates, medjool, pitted, chopped

  • 1/4 c. banana, peeled, mashed

  • 1/4 c. coconut flour

  • 1/2 c. collagen peptide powder

  • 1 t. vanilla bean powder*

  • 1/2 t. cinnamon, ground

  • 1/4 t. salt

  • 1/3 c. coconut butter, to drizzle

Directions

  • TOAST COCONUT & PROCESS DOUGH
  • Preheat oven to 350°F and line a cookie sheet with quilon-silicone-free parchment paper.
  • Toast coconut in oven until light golden brown, 6 min. Let cool slightly.
  • Process toasted coconut in a food processor until a finely ground, mealy texture.
  • Pit dates and pulse into coconut until thoroughly chopped and paste-like.
  • Pulse in banana, coconut flour, collagen, vanilla powder, cinnamon & salt until a dough has formed; if dough is too wet, pulse in 1 T. coconut flour.
  • FORM, DRIZZLE & SET
  • Scoop dough onto lined cookie sheet with a cookie scoop and freeze to set for 10 min.
  • Meanwhilemelt coconut butter.
  • Drizzle bites with melted coconut butter and freeze until completely set, about 20 min. Refrigerate in an airtight container.

Tips & Tricks

  • Skip toasting coconut and melt coconut butter in a hot water bath for a completely raw recipe.
  • Vanilla Powder Substitute: Vanilla powder is a low-histamine alternative for vanilla extract, if histamine isn’t a problem you can substitute vanilla extract.
