Ingredients
3/4 cup coconut cream concentrate*, softened
1 tablespoon lemon zest
1/4 cup lemon juice, fresh-pressed
1/4 cup cashew butter
2/3 cup cane sugar, organic
1 large egg
1 teaspoon baking powder
1 pinch of salt
Directions
- Preheat oven to 350°F , line a cookie sheet with silicone and Quilon-free parchment paper.
- Soften coconut cream by placing it in a pan of hot water.
- Scrub lemons thoroughly under running water, zest with a microplane or fine grater, juice, and strain.
- Place coconut cream in a food processor and pulse until smooth, then add remaining ingredients and process until blended and lemon zest has disappeared.
- Roll hardened dough into 1″ balls, wetting hands to help keep dough from sticking. Depending on how soft your coconut cream is, you may need to refrigerate for 30 min. to 60 min. to harden before rolling.
- Place dough balls on prepared cookie sheet, leaving ample space between the dough to spread as it bakes. Press down slightly, and bake until slightly brown around edges, 10 min. to 12 min.
- Cool cookies on the cookie sheet for 3 min. Serve warm or store in an airtight container; refrigerate if you prefer a harder cookie.

- *Coconut Cream Concentrate: We prefer to use Tropical Traditions which comes with a thick layer of coconut oil on the top. Remove that layer to use for something else, as it will cause the cookies to spread too much.
