Ingredients

  • 8 cups butternut squash, peeled, seeded, chopped, 1″ chunks

  • 1 1/2 teaspoon chipotle chiles in adobo sauce, minced

  • 1 cup water, purified

  • 1/4 teaspoon salt

  • 1/4 cup half and half

  • 1/4 cup butter, unsalted

  • 3 tablespoons honey, raw

  • 1 pinch salt, to season

  • 1 pinch pepper, black or white, fresh ground

Directions

  • Cut squash into 1″ chunks and mince chipotle chilies.
  • Mix squash, water & salt in a multicooker pot, secure lid, select ‘manual-high pressure’, and adjust time to 12 min. Turn off multicooker and quick-release pressure.
  • Drain squash in a colander and gently toss to remove excess water.
  • Return squash to pot and mash until mostly smooth, fold in chilies, half-and-half, butter & honey, and season with salt & pepper, and serve warm.

Notes

  • For a low-oxalate diet: substitute black pepper for white pepper.
  • The average heat-up time for multicookers is 15 min.
