Ingredients

  • 1/4 cup butter

  • 3/4 cup potato, chopped finely

  • 3/4 cup onion, peeled, chopped finely

  • 1 lb. broccoli, 2″ pieces

  • 1 quart water, purified, or broth of choice

  • 4 bay leaf

  • 1/8 teaspoon baking soda

  • 1 cup yogurt, plain, full fat + for garnish

Directions

  • PREP & SAUTÉ 
  • Peel broccoli stem and chop into 2″ pieces, chop head into florets. Set 4 small florets per serving aside for garnish.
  • Chop potatoes & onion.
  • Heat butter in a large, heavy-bottomed soup pan on medium. Sauté potatoes & onion until softened, 5 min.
  • SIMMER & PURÉE 
  • Add broccoli, water, bay leaves & baking soda. Bring to a boil , then reduce to a simmer until vegetables are tender, about 20 min. Add broccoli florets for garnish and cook 10 min.
  • Remove garnish broccoli florets & bay leaves and cool soup slightly.
  • Stir in yogurt and purée using an immersion blender or in batches in a blender until smooth.
  • Ladle into individual bowls, garnish with reserved florets, drizzle with additional yogurt and serve warm.
