Ingredients

  • 12 oz. cream cheese

  • ½ cup cane sugar, organic

  • 1 tablespoon lemon juice, fresh-pressed

  • ½ teaspoon vanilla extract

  • 1 pinch kosher salt

  • 1 cup heavy cream

  • 3 lb. strawberries, hulled

Directions

  • PREP, FILL & CHILL
  • Hull* strawberries, then hollow out the stem end slightly to open up tops into little cups. Slice a small amount off of each bottom so they will sit flat. Layout in a container with a cover with enough room for filled berries to be covered without the filling touching the lid.
  • Mix cream cheese, sugar, lemon juice, vanilla, & salt with a hand mixer at medium speed until soft and smooth.
  • Scrape bowl and beater with a spatula, switch to a whisk attachment and pour in cream. Mix at low speed to, then increase to high and whip until the mixture can hold stiff peaks, 3 min. to 5 min. depending on your mixer.
  • Pipe the filling into the centers of each berry, cover and refrigerate until the filling is firm and cold, about 4 hr. to 6 hr. Serve chilled.

Tips & Tricks

  • Hulling a strawberry means removing the green stem.
