Ingredients
1 cup roasted red bell peppers, chopped
3 medium green onions, chopped
1 tablespoon + 1 teaspoon fresh-pressed lemon juice
1/2 cup crispy toasted walnuts
1/3 cup soda cracker crumbs
1/4 cup olive oil, extra virgin
1 tablespoon + 1 1/2 teaspoon pomegranate molasses
1 1/2 teaspoon sweet paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
Directions
- Chop roasted bell peppers & green onion roughly and juice lemon.
- Toast walnuts in a dry pan over medium heat until fragrant.
- Process all ingredients in a food processor until a uniform coarse puree forms, scraping down sides of bowl halfway through processing. Serve at room temperature or refrigerate in a tightly sealed glass jar.
Notes
- You can use store-bought, jarred roasted red peppers, but we recommend you roast your own. Simply quarter your peppers, arrange skin sides up on a baking sheet and broil on the top oven rack until skins start to bubble and char. Place bell peppers in a glass container, seal tightly and let them steam for 10 minutes.
- Crispy nuts and seeds are soaked for 8-12 hours to reduce antinutrients and unlock nutrition, then re-crisped using low heat to preserve nutrients and fats. We recommend using crispy nuts over unsoaked/raw nuts and seeds.
