4 med. heads of garlic
2 tablespoons olive oil, extra virgin
Directions
- PREP & ROAST
- Preheat oven to 350°F.
- Remove loose papery outside layers from garlic, slice about ½” off the top of garlic bulb, and trim a bit of each clove top to expose cloves.
- Drizzle head with oil so it runs inside the clove sections, allow to soak in and place bulbs cut side down into a small baking dish. Roast on middle rack until deep, golden brown, and a sharp knife slides in easily, 35 min. to 40 min. [1]
- Let sit until cool enough to handle, 10 min.
- Squeeze entire head of garlic to release roasted garlic from skins, picking out any bits of peel, and use immediately or refrigerate.
Tips & Tricks
- Baking the heads upside-down uses the garlic’s own natural wrapper to retain moisture and eliminates the need for foil; if you desire a softer baked clove, place in a baking dish with a lid.
