Apple-Cottage Cheese Pastries are the perfect warm and cozy baked good for fall. It blends tangy cottage cheese with the sweetness of cinnamon-covered apples. Suitable as a breakfast treat or dessert, pastries will become a fall favorite!

Ingredients

  • ORGANIZE INGREDIENTS
  • 1 c. whole milk cottage cheese

  • ½ c. butter, cut into small cubes

  • ¼ c. cane sugar, organic

  • ½ t. salt

  • 2 c. all-purpose flour*

  • 1 T. baking powder, aluminum-free

  • 2 med. apple, cored, diced to 1/4″

  • ¼ c. cane sugar, organic, for coating

  • 1 t. cinnamon, ground

Directions

  • PREP, FORM, and BAKE
  • Preheat oven to 350°F and line a baking sheet with quilon-silicone-free parchment paper.
  • Process cottage cheese, butter, sugar & salt in a food processor until smooth.
  • Process in flour & baking powder until it forms a dough.
  • Core and diced apples and knead gently into the dough until thoroughly mixed in.
  • Mix sugar & cinnamon, flour a surface, and roll dough into golf ball-sized balls, then roll into cinnamon sugar
  • Space evenly on lined baking sheet, leaving room to expand, and bake until puffy and golden, about 15 min. to 18 min.

Tips & Tricks

  • We found that these pastries are best when freshly baked, as they tend to become slightly soggy and dense if left to sit.
  • Substituting Einkorn for other flours: Adjust liquids by 10-20% as it absorbs less water than modern wheat. Mix gently. Einkorn’s weaker gluten structure results in dense baked goods when overmixed. Combine with other ancient grains like spelt or emmer for lighter textures.
